Saffron Rice

Saffron Rice
2 Tbsp. olive or vegetable oil
1 cup shredded carrots
2 1/4 cups water
1 (14.5 ounce) can ready to use
chicken broth
1 tsp. coriander
1/2 tsp. salt
1/4 tsp. crushed saffron
2 cups uncooked long grain
white rice
1/4 cup sliced green onions
Heat oil in large sauce pan over medium heat until hot. Add carrots; cook and stir 2 to 3 min. or until carrots are slightly tender. Add water and broth; bring to a boil. Add all remaining ingredients except onions; mix well. Reduce heat to low; cover and cook 14 to 18 min. or until rice is tender and liquid is absorbed. Stir in onions.
