Preheat oven to 350 degrees
Combine mashed potatoes, 1/2 cheese, chili pepper, cumin, salt, pepper, onion, zuchinni, garlic.
Place 1/4 filling on tortilla roll up. Place roll seam side down in 8 x 8 beking pan. Repeat with remaining
shells. Pour enchilada sauce even over top, sprinkle with remaining cheese. Bake until cheese is melted
and bubbly.
