Pineapple & Cheese Salad

2 cans pineapple, cubed

1/2 Lb. cheese, cubed

1/2 C. pecans, chopped

1 C. marshmallows

1 heaping T. flour

1 C. sugar

2 eggs, beaten

1/2 C. milk

Pinch of Salt

Drain pineapple juice and mix with sugar, flour, eggs, milk and salt. Cook until thickened (best in double boiler). Pour over pineapple, cheese, marshmallows and nuts and stir gently. Great for luncheon.

Pizza Meat Loaf

MEAT MIXTURE:

1 1/2 lbs lean ground beef

1 cup soft bread crumbs

1 1/2 tsp salt

1 tsp oregano

1/4 tsp basil leaves

1/4 tsp pepper

1/2 clove garlic minced fine

1 egg

SAUCE MIXTURE:

1/2 C. chopped onion

1 ( 6 oz) can tomato paste

1/4 tsp salt

1 C. water

TOPPING:

1 T. GRATED PARMESAN CHEESE

1 C. shredded Mozzarella cheese

Mix Sauce Mixture together and bring to a boil and simmer uncovered for

20 minutes. Mix Meat Mixture together well, then add 1/ 2 cup cooked

sauce mixture and mix again. Shape into a loaf. Place on a large baking pan that has been sprayed with Pam. Bake for 1 hour at 375 degrees, then pour remaining sauce over top of loaf and sprinkle topping over all and bake another 10 minutes. Let stand for at least five minutes, before slicing.

$100 Broccoli Casserole

2 pkgs. frozen broccoli

1 z. pkg cream cheese

1 envelope dry onion soup mix

1 8oz. carton sour cream

1 small can water chestnuts, slice, drain

Sharp grated cheese

Ritz cracker crumbs

Cook broccoli until tender in the amount of water called for on one package & drain. Have cream cheese out of refrigerator at least 3 hours to soften. Mash together soup mix, cream cheese, sour cream & chestnuts. Add to drained broccoli and stir well. Place in lightly buttered casserole dish & top with grated cheese and cracker crumbs; dot with butter. Bake at 275 for 30 to 35 minutes. Serves 8 -10

Sawdust Pie

7-egg whites

1-1/2 cups white sugar

1-1/2 cups graham cracker crumbs

1-1/2 cups chopped pecans

1-1/2 cups flaked coconut

1-unbaked 9-inch pie shell

Mix together the unbeaten egg whites and sugar. Stir in graham cracker crumbs, pecans and coconut. Stir together by hand until well blended. Pour into un-baked pie shell. Bake in preheated 325 degree oven until glossy and set, about 25 minutes. Do not over-bake. Center should be gooey. Serve with sliced bananas and whipped cream.

Taco Soup

2 Lbs. ground beef

1 C. water

1 pkg. taco seasoning mix

1 can whole-kernel corn

1 can green beans

1 Lg.can stewed tomatoes

Taco Chips & Grated Cheese

In a skillet, brown light ground beef, add 1 cup water and taco seasoning mix. Add the meat mixture to the canned goods in a large pot. Simmer for 30 minutes to one hour or longer. This is a tasty and easy vegetable soup and is always better the next day. Serve topped with taco chips and grated cheddar cheese, if desire.
