Out-Of-This-World Cake

2 cups sugar

1/2 Lb. butter or margarine softened

4 eggs

1 C. milk

2 tsp. baking powder

3-1/3 cups graham cracker crumbs

1 cup flake coconut

1 cup pecans, chopped

1(20oz.) can crushed pineapple, drained

Topping:

1/4 C. butter or margarine,softened

2/3 C. brown sugar

1/4 C. milk

1 C. coconut

1 C. pecans, chopped

Beat first 6 ingredients together well. Fold in coconut, nuts, and pineapple. Pour into a greased 9x13 inch pan and bake at 350 degrees for 1 hour or until tests done. Topping: Mix all ingredients and spread on cake. Return to oven and bake 5 minutes or until topping bubbles and is slightly browned. 068 -12-01-02

Green Country Peppers

6 medium green peppers

1 Lb. pork sausage

1 lb. hamburger

1/4 C. chopped onion

1 1/2 C. cooked rice

1 jar Cheez Whiz or 8 oz. American cheese

1/2 C. catsup

Salt and Pepper

Brown meat and drain. Add onions; cook until tender. Stir in most of the cheese and catsup. Season to taste. Fill peppers. Bake at 350 degrees for 35 minutes. Top with remaining cheese to serve. 100 - 12-01-2002

Cranberry Nut Swirls

1/2 C. butter or margarine

3/4 C. sugar

1 egg

1 tsp. vanilla flavoring

1-1/2 C. flour, sifted

1/4 tsp. baking powder

1/4 tsp. salt

1/2 C. finely ground raw cranberries

1/2 C. nuts chopped

3 T. brown sugar

Combine first 4 ingredients. Beat until light and fluffy. Combine next 3 ingredients and add to the sugar mixture, mixing well. Refrigerate overnight. Finely grind cranberries, add chopped nuts and brown sugar. Refrigerate. On lightly floured waxed paper, roll dough into a 10 inch square. Spread cranberry mixture on top of dough, roll up jelly-roll fashion. Secure edges with milk. Wrap in waxed paper and freeze overnight or longer When ready to bake, slice into 1/4 inch slices and place on well greased cookie sheet. Bake at 375 degrees for 10-15 minutes or until edges are light brown. 048 - 12-01-2002

Ham Macaroni Supreme

1 box Kraft Deluxe macaroni and cheese dinner

1 cup leftover ham, diced or cubed

3 T. butter

2 T. minced fresh parsley

2 T. green pepper, diced salt and pepper to taste

1 small onion chopped

1 ( 2 oz) jar of pimientos, drained and diced

1 can mushroom stems/pieces,drained

1 can cream of mushroom soup

1 soup can of milk

In large 10 inch skillet melt butter and saute onion and green pepper of low heat. Add mushrooms ,pimientos and parsley cook until tender, about 5 minutes. Add soup, milk; blend well. Add salt and pepper to taste. Be careful with salt as ham has salt added to it. While cooking this mixture. Cook macaroni as package says. drain and add to skillet along with ham. Mix well and cook a few minutes longer. Yes you add cheese as it says on package. Place in a buttered oblong dish 1 1/2 quarts. Bake at 350 25-30 minutes until hot and bubbly. 034 - 12-01-2002

Apple Cinnamon Swirl Loaf

1 pkg active dry yeast

1 1/4 C. warm water (115-120 degrees)

1 egg

1 Box 1-layer size white cake mix

1 tsp. salt

3 1/2 - 3 3/4 C. all purpose flour

2 1/2 C. chopped apples (cored and pared)

1/3 C. sugar

1/3 C. chopped pecans

2 tsp. ground cinnamon

Dissolve yeast in warm water. Add 1 egg, and cake mix, along with salt, and beat until smooth. By hand, still in flour. Knead on lightly floured surface and let rise until double, about 1 1/4 hours. Punch down, divide in half. Cover, let rest 10 minutes. Combine the chopped apples with sugar, pecans and cinnamon. Melt 1/4 Cup butter and set aside. Roll half the dough into a 12x8 inch rectangle. Brush surface with some of the melted butter. Sprinkle with half the apple mixture. Beginning with the short side, roll up and seal side and ends. Placed in greased 8x4x2 inch loaf pan. Brush top with additional butter. Repeat with remaining dough, filling and butter - MAKES 2 LOAVES. Bake loaves at 375 degrees for 30-35 minutes. 037 - 12-01-2002
