Amazing Coconut Pie

2 C. milk
3/4 C. sugar
1/2 C. biscuit mix
4 eggs

1/4 C. margarine
1 1/2 tsp. vanilla
1 C. Baker's Coconut
|
|
Combine the milk, sugar, and biscuit mix in a blender container. To this mixture, add eggs, margarine
and vanilla; cover and blend for 3 minutes on low. Pour into greased pie pan. Let stand 5 minutes. Sprinkle
with coconut. Bake for 40 minutes at 350 degrees. Good!

Lasagna

1 medium onion
1 clove garlic
1 lb. ground chuck
1 4-oz can of mushrooms
2 6-oz cans of tomato paste
1 8-oz. can of tomato sauce
2 tsp. of salt
1/2 tsp. oregano
3/4 C. water

1/2 pkg lasagna noodles
1 pt. of small curd cottage cheese
1/2 C. parmesan cheese
1 tsp. salt
1/2 tsp. pepper
1 pkg. chopped frozen spinach
2 T. parsley
8 oz. grated mild cheddar cheese

Brown meat and add remaining ingredients, cook until thick . Cook noodles
per directions. Combine spinach, cottage cheese, salt, pepper and parsley. Alternate meat sauce, cottage
cheese and noodles. Top with cheese. Cover with foil and bake at 350 degrees F. for 45-60 minutes.

Pizza Soup

1 1/4 C. sliced fresh mushrooms
1/2 C. finely chopped onion
1 tsp. vegetable oil
2 C. water
1 can (15 oz) pizza sauce
1 C. chopped fresh tomatoes

1 C. chopped pepperoni
1/2 C. cooked Italian sausage
1/4 tsp. Italian seasoning
1/4 C. grated Parmesan cheese
Shredded mozzarella cheese to garnish

In large pan, saute mushrooms and onion in oil for 2-3 minutes, until tender. Add water, pizza sauce,
pepperoni, tomatoes, sausage and Italian seasoning. Bring to a boil over medium heat. Reduce heat; cover
and simmer for 20 minutes, stirring occasionally. Before serving, stir in parmesan. Garnish with mozzarella.
Yield: 4 servings Note: I forgot to pick up pizza sauce and substituted 2 8-oz cans of tomato sauce, 2
tbl. ketchup, 1 tsp. oregano, 1/4 tsp garlic powder and 1/4 tsp black pepper. I have also used olive oil
rather than vegetable oil.

Grilled Potatoes

4 med potatoes
2 med onions 2 med tomatoes

Aluminum Foil for pouches
Salt
Pepper
4 Tbs butter
|
|
Dice potatoes, onions and tomatoes. Tear enough aluminum foil for four large pouches. In each pouch, put
one diced potato, half of one diced onion and tomato. You can add more onion and tomato, depending on
your preference. Add one Tbs of butter to each pouch. Salt and pepper to taste. Season salt it also very
good in these.

King Reunion Potato Salad

2 C. mayonnaise
1/4 C. capers
12 green stuff olives, sliced
2 onions, chopped
1 C. celery, chopped
1 lg. bell pepper, chopped
8 sweet pickles, chopped

3 T. pickle juice
3 T. parsley, chopped
1 C. cucumber, chopped
2 lbs. potatoes
Salt and Pepper
Paprika
|
|
Combine mayonnaise, capers, olives, onions, celery, bell pepper, pickles, pickle juice and parsley. These
ingredients can be mixed early and refrigerated. Cook potatoes and cube for salad. Add cucumber and potatoes
to dressing. Salt and pepper to taste. Sprinkle well with paprika and serve. Serves 20
