SAUSAGE CASSEROLE

1 pound bulk pork sausage
2 cans (15 oz each) Beans with Spicy Sauce
|
|
1 can (14 1/2oz) Whole Tomatoes (drained)
1 pkg Corn Muffin Mix
|
|
Brown Sausage, drain fat. Add beans and tomatoes and blend. Bring to a boil. Pour into a 2 1/2 quart greased
casserole. Prepare muffin mix according to package. Drop by spoonfuls over meat and bean mixture. Bake
25 minutes or until top is browned. Serves 4-6

WHITE CHILI

1 lb. Great northern beans
4 C. chicken broth
1 clove garlic, minced
1 onion, chopped

4 oz. can green chilies, chopped
1-1/2 tsp. chili powder
4-cups chicken, cooked and chopped
Garnish grated cheese

Place beans in Dutch oven, cover with water and soak overnight; drain. Combine beans, broth, garlic and
onion. Bring mixture to boil. Reduce heat and simmer for 3 hours. Add chili powder and chicken, simmer
1 hour longer. Spoon into bowls and garnish with cheese. Serves 8 to 10

DENVER OMELET PIE

6 eggs
1/2 tsp onion powder
1/2 tsp dried thyme
1/2 tsp salt
1/8 tsp pepper

3 C. frozen shredded hash brown potatoes
1C. (4oz) shredded Swiss cheese
1/2 C. diced fully cooked ham
1/2 C. chopped green pepper (I used a red one)
1 med. tomato, thinly sliced - see note
|

Note: I served the tomato on the side.
Beat eggs, onion powder, thyme, salt and pepper. Stir in potatoes, cheese, ham and green pepper. Pour
into a greased 9" pie plate. Bake at 350* for 40-45 min. or until knife inserted near center comes
out clean. Garnish with tomato slices. Yield: 6 servings

Peanut Butter Honey Muffins

1 1/2 C. flour
2 1/2 tsp baking powder
1/4 tsp salt
1/2 cup brown sugar
Peanut Butter

In separated bowl mix the following 6 T. melted butter
2 eggs, beaten,
1 tsp. vanilla
1/4 cup milk.

Mix first FOUR ingredients together and set aside. Mix butter, eggs, vanilla and milk. Add the dry ingredients
to the wet mixture and mix just till blended. Spray a muffin pan extra well with non-stick spray. Add
batter then make dent in middle and spoon 1 tsp Peanut Butter in each muffin. bake at 350 for 15-20 minutes.
Or test done. cool in pan 10 minutes. Good served warm.

SPICED PEACH SALAD

1 jar spiced peaches
1 cup of juice from above
|

1 3-oz. package orange gelatin
3/4 cup water
|
|
If peaches are whole, slice from the seed and discard seed. Cut peach into small chunks. Heat the juice
to boiling and pour over the orange gelatin. Add cold water and refrigerate to chill and firm. Great with
pork - ham, roasts, chops, etc.
