Wild Rice and Chicken Soup

3 10.5 oz cans condensed
chicken broth 2 cups
water 1/2 C. uncooked wild rice 1/2 C. sliced green onion 1/2 C. butter or margarine 3/4 C. all-purpose
flour

3/4 tsp salt
1/2 tsp poultry seasoning
1/4 tsp ground black pepper
2 C. cream
2 C. cooked & cubed chicken (can use canned chicken, if desired)
1 2-oz jar chopped pimento peppers- drained

Combine broth, water & rice in large soup pot. Bring to a boil. Reduce
heat, cover and simmer 35-40 minutes, until rice is tender. Saute onions in butter in a medium saucepan
over low heat. Stir in flour and seasonings. Cook, stirring constantly, until flour mixture is bubbly
and thick. Stir in cream. Cook for six minutes or until mixture thickens slightly, stirring constantly.
Stir this mixture into the broth and add chicken and pimentos. Heat through. Serves six or more.
