Spicy 15 Bean Soup

Spicy 15 Bean Soup
1 lb All pork link sausage [chopped in 1/4 inch lengths] or diced ham
1 1/2 lb. package of dry 15 bean soup
[has pkg of spices in package]
2 1/2 quarts water
1 1/2 tsp salt
1/2 tsp black pepper
1 tsp garlic power [fresh garlic can be substituted]
1 cup chopped green onions
1/2 cup chopped Celery
1/4 cup chopped Bell Peppers
1/2 can diced Ro-Tel Tomatoes
[tomatoes and chiles]
In order to shorten cooking time, the beans may be washed and soaked over
night. Set aside the package of spices and the rotel tomatoes. Mix all the other
ingredients in a 8-10 quart boiler. Bring to a hard boil, and reduce heat to boiling.
About 30 minutes before beans are done, put in the package of spices and Ro-tel
tomatoes. If you like really spicy food, put the whole can of Ro-Tels in. Soup will
be done in about 2 hrs. and 15 min. if soaked, or about 3 hrs. if not. I really like dried beans of all kinds, but this is the best that I have ever made.
