Mexican Chicken Soup
Cooking spray
1 pound skinless,
boneless chicken breasts,
cut into cubes
1 large green or sweet red pepper,
coarsely chopped
2 teaspoons chili powder
1 cup cooked rice

1 teaspoon garlic powder
2 cans (16 oz. each) chicken broth
1 pkg. (10 oz.) frozen whole kernel corn
1 teaspoon chopped cilantro
or parsley (optional)

Spray 3 quart saucepan with cooking spray. Heat over medium-high heat
1 minute. Add the chicken, pepper, chili powder and garlic powder; cook until brown, stirring often. Add
broth, corn and rice. Heat to boiling. Reduce heat to low. Cook 10 min. stirring occasionally. Stir in
cilantro. Serve with lime wedges. Makes 5 servings.
