Uncle Bill's Pea Salad

2 cups frozen petite green peas
1/2 cup sour cream ( low fat if desired)
1/2 cup mayonnaise
(or light mayonnaise if desired)
1 1/2 tsp. dried dill weed

3 Tbsp. finely chopped onion
4 Tbsp. finely chopped celery
1/4 cup water
4 slices bacon, fried crisp

In a microwave proof dish, cook peas on HIGH (full power) for 2 minutes, stir and cook for an additional
2 minutes on HIGH (full power). Remove from microwave and drain. Add a few ice cubes to peas and let cool;
then drain. In a large bowl, add peas, sour cream, mayonnaise, dill weed, onions, celery and mix well
to blend. Chill for at least 20 minutes in refrigerator before serving.
In a small frying pan, add 1/4 cup water and bacon, bring to boil and cook covered for about 3 minutes.
Drain water and continue to fry bacon, turning occasionally until bacon is dry crisp; do not burn. Place
bacon on absorbent paper to drain and cool. When bacon is cooled, crumble and garnish salad when serving.
Uncle Bill's Tips: You can also use fresh dill weed if available. Use 3 to 4 tablespoons of finely chopped
fresh dill weed.
