Mandarin Almond Chicken Salad

Grilled chicken, cooked and cut into strips
4 tb. sugar, divided
1/2 c. slivered almonds
1/4 c. veg oil
2 tb. vinegar
1 tb. parsley
1/2 tsp. salt

1/8 tsp. pepper
1/8 tsp. hot pepper sauce
1 bunch red leaf lettuce, torn (or salad greens of choice)
1 - 11oz. can mandarin oranges, drained
1 sm. red onion, sliced

In small skillet, melt 3 tb. sugar over low heat. Add almonds, stir until coated. Cool; break into sm.
pieces and set aside. In jar with lid, combine oil, vinegar, parsley, salt, pepper, pepper sauce, and
remaining sugar; shake well. Just before serving, combine lettuce, oranges, onion and almonds in large
salad bow. Shake dressing; pour over and toss. Arrange chicken strips over top. Yield: 4-6 servings. Comment:
This is very close to a "Tropical Chicken Salad" that is served at a restaurant in our town,
the Marketplace. Very yummy!
