Southern Pecan Pie

3 eggs
1 cup sugar
2 tablespoon melted butter
1/2 teaspoon salt
3/4 cup cream

1/2 cup dark corn syrup
1 tablespoon vanilla
1 1/2 cups pecans
1 (9-inch) pie shell
|
Beat eggs and mix in sugar, butter and salt. Whip cream gently for 1 minute and stir into egg mixture
with corn syrup. Add vanilla and 1 1/4 cups pecans. Spoon into pie shell. Sprinkle remaining nuts on top.
Bake at 375 for 40-50 minutes.
