Salsa Verde Chicken
1/3 cup green salsa (salsa verde)
1 egg
1 cup crushed tortilla chips
1 tsp. chili powder

1/4 tsp. garlic powder
4 boneless, skinless
chicken breast halves (1 lb.)
1 Tbsp. olive or vegetable oil

Heat oven to 375 degrees. Spray cookie sheet with cooking spray. Lightly beat salsa and egg. Mix crushed
tortilla chips, chili powder and garlic powder.Dip chicken into salsa mixture, then coat generously with
tortilla chip mixture. Place on cookie sheet. Drizzle with oil. Bake uncovered about 30 minutes or until
chicken is no longer pink when centers of thickest pieces are cut. 4 servings.
