Oven-Baked Chicken With Orange Sauce

1 fryer chicken,cut into pieces
1/2 cup fresh orange juice
1 tsp. salt
1 tsp. dry mustard

1 tsp. Tabasco sauce
1-3 tbsp. orange zest
1/3 cup vegetable oil
4 oz. can sliced mushrooms, drained

Heat oven to 400 degrees. Wash chicken, drain and place skin-side-down in a single layer in a shallow
baking pan. Mix rest of ingredients (except mushrooms) to make sauce and pour over eachpiece of chicken,
coating well. Bake 45 minutes, basting occasionally. Turn, sprinkle mushrooms over top, baste again with
sauce, and bake 15 minutes longer. Remove chicken to hot platter and spoon sauce over top. (For crisp
chicken, bake at 425 degrees). Makes 4 -6 servings.
