Company Fried Chicken

1 Large Iron Skillet
1 cut-up Frying Chicken
2 TB. Margarine

1 TB. Salt
1 TB. Black Pepper
2 Cups Flour


Preheat oven to 400. Melt margarine in iron skillet. Place flour, salt, pepper and chicken in large brown bag or ziplock bag and shake until chicken is coated completely.

Place chicken in iron skillet with margarine. Bake for 30 minutes at 400 degrees. Turn chicken over one time and bake another 30 minutes. Chicken will be crispy and golden brown.

Drippings left in skillet make excellent gravy. Also, chicken will not brown correctly unless you use an iron skillet.

Comment: This dish is called "Company Fried Chicken" because you don't have to stand over the stove and keep turning it. You can visit with your company while the chicken does its own thing!
