New York Style Cheesecake

3 (8 oz.) pkgs. Cream Cheese
1 tsp. corn starch
1 cup sugar
2 tsp. vanilla
4 eggs

1 pint sour cream
1/2 cup sugar
1 tsp. vanilla
Graham cracker crumbs or
vanilla wafer crumbs

Cream cheese, corn starch, 1 cup sugar, 2 tsp. vanilla and eggs, then beat in mixer for 20 minutes (it
seems like a long time but it is worth it). Butter bottom of 9" x 12" cake pan liberally and
cover with crushed vanilla wafer or graham cracker crumbs. Pour in above mixture and bake in 350 degree
oven for 30 minutes. Cool 5 minutes. Meanwhile combine sour cream, 1/2 cup sugar, and 1 tsp. vanilla.
Smear on top of cake and put back in oven for 5 minutes. Refrigerate overnight for best results.
