Recipe - Desserts 032
Lime Jello Pear Mold

Submitted by: Marilyn Cox
Location: Plainfield, Ilinois

1 small package lime jello
1 (16 ounce) can pears
1 (8 ounce) package cream cheese
(at room temperature)
1 (8ounce) carton whipping cream
Walnut pieces for garnish
Drain juice from pears, you should have 1 cup, if not, add enough water to make 1 cup. Heat juice to boiling, pour over the lime jello, mix well. Set aside to cool. Beat cream cheese with 1 tablespoon whipping cream till fluffy. Add cream cheese mixture to jello, mix well and refrigerate for 1/2 hour. Mash the remaining pears and add to the cooled jello mixture. Beat the cream till stiff (you can sweeten the cream by adding a little sugar while beating, if you prefer). Fold the cream into the jello/pear/cream cheese mixture. Place the walnut pieces on the botttom of a pretty mold and then put the jello mixture into the mold. Refrigerate overnight.

This was my grandma's special holiday jello mold. To this day, it isn't a real holiday unless this is served. It's not a low-cal dish, but who cares, it'e delicious!!
