Key Lime Cheesecake Squares

CRUST:
1/2 cup graham wafer crumbs
1/2 cup vanilla wafer crumbs
1/2 cup ground almonds
1/4 cup margarine

FILLING:
8 oz. cream cheese
1/2 cup granulated sugar
1 large egg
1/2 cup fresh lime juice
2 tsp. grated lime zest

TO MAKE CRUST:
Preheat oven to 350 F. In a mixing bowl, combine both wafer crumbs, ground almonds, mixing well. Cut in
margarine using a pastry blender or a fork until mixture is crumbly. In a 8" x 8" oven-proof
casserole dish, press wafer mixture firmly in bottom of dish. Bake in preheated 350 F oven for 15 minutes.
FILLING:
In a medium-size mixing bowl, using an electric mixer, beat softened cream cheese, sugar, and egg until
smooth. Add lime juice and grated lime zest and continue to beatuntil smooth and creamy. Spread mixture
evenly over baked crust. Return to oven and bake at 350 F for 15 to 20 minutes, or until filling is set.
Cool on wire rack. Chill in refrigerator before cutting into squares. Decorate each square with halved
maraschino cherries or halved fresh strawberries.
