Apricot and Date Balls

125 grm chopped dates
125 grm chopped Dried Apricots or Prunes
60 grm butter which is just over 1/4 lb
1/2 cup sugar

1 1/2 cups Rice bubbles or
rice cereal (Rice Krispies)
1 Tablespoon Chopped preserved ginger
Coconut to roll them in
|
Cook dates, apricots in butter, add sugar and ginger, and stir well Add Rice bubbles, then roll into small
balls, and roll in coconut. Put into the fridge to set.
