Great Mid-West Especiale
1 lb. Jimmy Dean taco meat
(or brown beef plus taco seasoning)
2 cups cooked Minute Rice
1 zucchini, sliced
1 green pepper, sliced
1 bunch green onions -
about 6-8, with tops, sliced

2 medium tomatoes,
peeled and diced
1 can cheddar cheese soup
1 8 oz. carton sour cream
1/2 teaspoon garlic powder crushed corn chips

Brown meat, drain fat, set aside. Cook rice while meat is browning. Using slicing blade in processor (or
slice) zucchini, pepper and onion. Remove blade and add tomatoes. Toss lightly. Combine cheese soup, sour
cream and garlic. Layer in 2 qt. casserole: rice, vegetables, meat, cheese sauce, corn chips. Bake 30
min. at 350 degrees. Compliment this dish with warm tortilla chips and pincante sauce.
