Red Velvet Cake

Red Velvet Cake
2 tablespoons cocoa
2 ounces (4 tablespoons)
liquid red food coloring
cup shortening
1 cups sugar
2 eggs

1 teaspoon salt
1 teaspoon vanilla extract
1 cup buttermilk
2 cups flour
1 teaspoons baking soda
1 tablespoon vinegar


Make a paste of the cocoa and red food coloring. Cream shortening, sugar and eggs. Add salt, vanilla and buttermilk alternately with flour. Add cocoa paste. Mix soda and vinegar and fold into cake batter. Pour into two greased and floured 9-inch cake pans and bake 25 minutes, or until done, at 350. Remove from oven; cool layers 10 minutes. Remove from pans and place on wire racks to cool completely.

Cream Cheese Frosting:
cup butter, softened
8 ounces cream cheese, softened
1 teaspoon vanilla
approx 2/3 of a 1-lb. box powdered sugar, sifted

In mixing bowl, cream well the butter, cream cheese, and vanilla. Beating well, gradually add powdered sugar to taste. Carefully slice the rounded top off of each completely cooled layer to make a flat surface. Fill and frost.
