Orange Cake

Orange Cake

8 ounces of Butter, no subs
2 cups of confectioners sugar
2 to 3 large oranges
4 eggs beaten
1 3/4 cups self rising flour
3 ounces of chopped fresh orange peel
2 Tablespoons of granulated sugar
1. Preheat oven to 300 F
2. Grease and line an 8" deep sided round cake pan.
3. Grate the zest of 2 oranges, squeeze the juice and set aside.
4. Cream the butter, 1 1/4 cups of the confectioners sugar, and orange peel, until light and fluffy.
5. add eggs and mix well.
6. Toss the orange zest into the floor and add gently to the butter mixture,
7. add 2 Tablespoons of orange juice and mix in.
8. Spoon into cake tin and sprinkle the 2 Tablespoons of granulated sugar over the surface.
9. Bake for 80 minutes.
10. To test insert a skewer into center of cake and when it comes out clean the cake is done.
11. When you remove the cake from oven combine 5 ounces of orange juice with the remaining sugar. Spoon over the cake while it is still hot and in the pan. Allow the cake to cool in the cake tin.

My friend is visiting from England and she brought some great recipes to me from where she lives.
This particular tearoom was unknown until Prince Of Wales and Princess Diana chose nearby Highgrove as their country residence.

I heard a lot of history of this place and I wish I could go and visit. I want to share two cake recipes with you, we have made them and they are more than wonderful. So moist and with the Orange Cake, the aroma of orange fills the room with the first cut of the cake. A nice Earl Tea is the perfect accompaniment for this treat. Try it, I know you will love it.

This is the orignal recipe from the tea room, as my friend just happens to be the chef there, and this is her recipe.
