Maple Nut Cake

SIFT TOGETHER:

2-1/4 C. flour

3- tsp. baking powder

1- tsp. salt

ADD:

1-1/4 cups firmly packed brown sugar

1/2-cup shortening

1-cup milk

1-tsp.maple flavoring

BEAT: for 1 minute with electric mixer, until batter is well blended, then beat at medium speed for 1 minute.

ADD: 2-eggs

BEAT: for 1 minute.

FOLD IN: 1/2-cup chopped pecans

Browned Butter Frosting:

1/2 C. butter

3-1/2 C. confectioner's sugar

1/4 C. cream

2 tsp. vanilla

POUR: into two well greased and lightly floured 8-inch round layer pans, at least 1-1/4 inches deep. BAKE: in moderate oven 325 degrees for 25 to 30 minutes, or till tests done. Cool and frost and decorate with pecans. For Icing: Brown butter in saucepan and blend in confectioner's sugar, cream and vanilla. Beat until thick enough to spread. Thin with a few drops of cream, as necessary.
