Key Lime Cheesecake

1 3/4 cups graham cracker crumbs
5 tablespoons butter, melted
1 cup plus 1 tablespoon sugar
3 (8 ounce) packages cream cheese, softened

1 teaspoon vanilla
1/2 cup fresh lime juice
(about 6 limes)
3 eggs
|
Preheat oven to 350 degrees. Combine graham crackers, butter and 1 tablespoon sugar in medium bowl. Stir
well enough to combine crumbs with butter; keep the mixture crumbly. Press crumbs onto bottom and about
1/2 of the way up the sides of a 9" spring form pan. Bake crust for 5 minutes then set aside until
ready to fill. In a large bowl combine cream cheese, 1 cup sugar and vanilla. Mix with electric mixer
until smooth. Add lime juice and eggs and continue beating until smooth and creamy. Pour filling into
pan; bake 60-70 minutes. If top of cheesecake is turning light brown, it's done. Remove from oven and
allow to cool. When cheesecake has come to room temperature, put into refrigerator. When cheesecake has
chilled, remove the pan sides and cut into eight equal pieces. Serve with whipped cream or fresh fruit.
