Fresh Apple Cake with Caramel Glaze

3 cups diced apples
2 cups sugar
1 1/2 cup of oil
2 eggs
3 cup flour
1 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 tsp. vanilla
1 pkg. chpooed nuts
Directions:
Mix together sugar, flour, baking soda, salt, cinnamon and vanilla. Form a well, into this pour 1 1/2 cups of oil, 2 beaten eggs and 3 cups of apples. Mix throghly. Add nuts if desired. Mixture will be very stiff and greasy. Pour into an ungreased 9 x 13 pan. Bake at 350 for about 45 minutes or until golden brown.

To make glaze:
1/2 cup butter
1 cup brown sugar, firmly packed
1/4 cup pet milk
1 tsp. vanilla
Mix all together in a heavy saucepan. Bring to a boil over medium heat. Cook for 2 1/2 minutes to 3 minutes or until it reaches 220 degrees. Cool and ice cake. Makes 1 cup. Very moist and delicious cake!
