Sift together flour, baking powder, salt, and sugar (* 3 Tablespoons); add egg well beaten, milk and shortening;
beat well, (* I wouldn't; just gently but thoroughly mix it) and spread in a greased pan, having mixture
about an inch deep; core, pare and quarter apples, cut in thick slices, and arrange in rows on top of
cake; sprinkle with sugar and cinnamon, and bake in hot oven half an hour (* 375 F works). Serve with
liquid sauce.
* It can be served with a concentrated apple juice sauce thickened with a little cornstarch, or with whipped
topping, or even some applesauce or maple syrup.
This simply but tasty recipe is from a 1925 fund-raiser cookbook from the Rector's Guild of St. John's
Church, St. Paul, Minn. that I found in a second hand store. It's copied exactly, except for notes (*).
