Cranberry Layer Cake

CRANBERRY LAYER CAKE

1 pkg. white cake mix (18 1/4 OZ )
1 1/3 C.
water

1/3 C. vegetable oil

3 Eggs
1 T. Grated orange peel
1 C Fresh cranberries - coarsely chopped (IF using frozen, thaw)

1 C. finely chopped walnuts

ICING;
1- 8 OZ. Pkg. Cream Cheese - room temperature
1/2 C soft butter
1 tsp. Vanilla
1/2 tsp. grated orange peel
3 1/2 C. Confectioner's Sugar
1/4 C. finely chopped walnuts

PREHEAT OVEN TO 350 DEGREES. Flour and grease two 9-inch cake pans .
In large mixing bowl, combine the first five cake ingredients and mix well. Stir in the cranberries and walnuts. Pour mixture into the two cake pans and bake at 350 degrees for 30-35 minutes or until toothpick comes out clean. Cool for 10 minutes before removing from the pans and transfer to a wire rack to cool completely. MAKE THE ICING AS FOLLOWS - In a small mixing bowl, beat cream cheese butter, vanilla and orange peel until well blended. Gradually beat confectioner's sugar. Spread between cake layers and over top and sides of cake. Sprinkle with chopped Walnuts. Store in refrigerator. Yield: 12 servings. This is such a delicious cake and no one will ever know it started from a packaged cake mix! It makes a wonderful addition to your holiday table.
