Cherry Chocolate Cake
1 can (16 to 17 oz) light or dark sweet cherries
water
1 pkg (18-1/4 oz) chocolate cake mix
4 eggs

1/2 cup vegetable oil
1/2 to 1 tsp. almont extract
powdered sugar (optional)

Pour off and reserve syrup from cherries. Thoroughly drain cherries on paper towels.Add water to reserved
syrup to equal 1 cup. Combine cake mix, syrup mixture, eggs,oil and almond extract. Blend with spoon or
wire whip until smooth.Pour into microwave safe tube cake pan. Place pan in microwave on inverted microwave-safeplate
or pie dish. Microwave at medium for 10 minutes; turn pan 1/4 turn.Microwave at high for 5 to 6 minutes.
Allow to stand 10 minutes; invert onto serving plate.This kitchen tested recipe makes 10-12 servings.
