Mona Lisa Quiche
2 deep dish pie shells
1 lb. pork sausage
1 large onion
1 bell pepper
1 sm. jar sliced mushrooms

2 cups shredded cheddar cheese
3 Tbsps. self-rising flour
1 (14 oz.) can evaporated milk
6 eggs

Crumble and brown the sausage with the onion and 1/2 of the pepper, chopped. Drain off excess grease.
Add the mushrooms and put into the pie shells. Toss the flour with shredded cheese then layer this over
the sausage mixture. With wire whip or a fork beat the eggs, milk, salt and pepper together. Pour equally
into pie shells over the sausage mixture. Slice remaining bell pepper either length-wise and place in
a pinwheel fashion on top or slice the bell pepper around thinly and place on top of each quiche. Bake
in preheated oven at 350 degrees for 40 to 50 minutes on a cookie sheet. Let stand 10 minutes before slicing.
