Ham and Asparagus Brunch Bake
2 boxes Uncle Ben's Long Grain
and Wild Rice
1 lb. asparagus, cut into 1 each pieces
(about 2 1/2 cups)
2 cups chopped ham

1 cup chopped yellow or red bell pepper
1/4 cup finely chopped red onion
1 cup (4 oz.) shredded Swiss cheese

In large saucepan, prepare rice mixes according to package directions, adding asparagus during last 5
minutes of cooking. Meanwhile, preheat oven to 350 degrees. Grease 11 x 7 1/2-inch baking dish. Remove
rice mixture from heat. Add ham, bell pepper and onion; mix well. Place mixture in prepared baking dish;
sprinkle with cheese. Bake 25 to 30 minutes or until mixture is heated through.
Tip: This dish can be prepared ahead of time through step 3. Cover with foil and refrigerate several hours
or overnight. Bake, covered, in preheated 350 degree oven for 15 minutes. Remove foil and continue to
bake until heated through, about 10 minutes.
