Southern Cheese Bread
7 cups flour, in all
2 tablespoons sugar
1 tablespoon salt
2 packages active dry yeast
2 cups milk

3 tablespoons butter
2 eggs, beaten
4 cups cheddar cheese,
finely grated

Combine 2-1/2 cups flour, sugar, salt, and yeast in a mixing bowl. Combine milk and butter in a saucepan,
over a medium flame heat and stir to a boil, remove from heat, and cool to 105-110 degrees. Add to flour
mixture and beat until smooth and well blended. Add 1 cup flour, and beat until smooth. Add eggs, cheese,
and remaining flour-stir to mix well turnout onto a lightly floured surface and knead until smooth and
elastic. Place into a greased bowl, turning to coat on all sides cover and let rise in a warm place for
60-90 minutes, until doubled. Punch down and divide into 2 equal portions. Place into greased 9x5x3-inch
loaf pans. Cover and let rise for 60-90 minutes, until doubled. Bake @ 375 degrees for 35-45 minutes.
Remove from oven and immediately remove from pans. Serve hot or allow to cool on a cake rack.
