Oatmeal Pecan Muffins with Orange Butter
1 1/3 cups quick-cooking oats
1 1/4 cups flour
1/2 cup sugar
1 Tbsp. baking powder
1/2 tsp. salt
1 cup milk

1/3 cup butter, melted
1 egg
1/2 cup chopped pecans
1/2 cup butter, softened
1 Tbsp. powdered sugar
1 tsp. grated orange peel

Heat oven to 400 degrees. In a large bowl stir together oats, flour, sugar, baking powder and salt.In
small bowl stir together milk, 1/3 cup butter and egg; stir into dry ingredients just until moistened.
Stir in pecans.Spoon batter into greased 12-cup muffin pan. Bake for 17 to 19 minutes or until golden
brown. Cool 5 minutes; remove from pan.Meanwhile, in small mixer bowl combine 1/2 cup butter, powdered
sugar and orange peel. Beat at medium speed, scraping bowl occasionally, until light and fluffy (2 to
3 minutes). Serve warm with muffins.
