Irish Soda Bread

4 cups bread flour
2 cups buttermilk
1 1/2 cups raisins
1/4 teaspoon salt

2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons caraway seed
|
Preheat oven to 350 degrees. In large bowl, mix all ingredients except buttermilk. With large spoon, make
a well in the center of mixture and add buttermilk. Stir until all liquid is absorbed. If dough is too
sticky, add a little more flour. Turn out on a floured surface and knead very lightly. Shape into two
round loaves and place in 8 inch cake pans which have been heavily greased. Cut an X on top of each and
bake for 30-35 minutes. Slice and serve warm with butter. Makes 2 small loaves.
