Healthy Spicy Fruit Buns

500g bread mix (wholemeal preferably)
2 1/2 teaspoons yeast
1 teaspoon mixed spice
320ml warm water
1/4 cup currants
1/4 cup sultanas
1/4 cup finely chopped dates
1/4 cup chopped dried apricots
rind of one lemon
rind of one orange
1/2 teaspoon mixed spice
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
2 tablespoons water
glaze:
1 tablespoon apple juice
2 tablespoons skim milk
1 teaspoon vanilla essence
Add water to flour, yeast and mixed spice. Knead for 5-7 mins. Place in a bowl and cover with plastic wrap. Leave in a warm place to rise for 20 mins. Roll out a rectangle approximately 25cmX35cm on a lightly floured bench.
Combine all fruits and spices. Spread evenly over the dough and press down. Use a pastry brush to wipe edges with water. Roll up like a swiss roll and cut into 10 rounds. Place side by side on a non stick baking tray. Cover with plastic wrap and leave in a warm place for 45 mins.
Combine glaze ingredients. Lightly wipe over tops using a pastry brush. Cook at 220oC for 10 minutes. Turn heat down to 190oC and cook for a further 5-7 mins or until when skewer returns clean when they are speared with it. Cool on racks or serve warm.
