Banana Tea Loaf

12 oz. self rising flour, sifted in a bowl
6 oz. butter or margarine, softened
4 oz. granulated sugar
1 Tbsp. golden syrup
1 ripe banana, chopped (do not mash) *

1/2 tsp. ground cinnamon
1/2 tsp. mixed spice
2 eggs, beaten
2 Tbsp. cold black tea
2 eggs

Preheat the oven 350 F/180 C/gas mark 4 and grease (and line - optional!) a loaf baking tin. Gently rub
the butter or margarine into the self rising flour with your fingers until the mixture resembles fine
bread crumbs. Stir in the sugar, syrup or honey, chopped banana, cinnamon and mixed spice until thoroughly
combined. Mix together the beaten eggs and cold tea in a jug and pour into the dry ingredients. Stir in
with a wooden spoon. Bake for approximately one hour or when an inserted skewer comes out clean. Cool
on a wire rack.
Put up your feet, switch on some good tele and Voila! you have the perfect afternoon.
* Do not mash the banana as this will ruin the final product. I always use more banana cause I luv em!!
