Autumn (Apple Pumpkin) Muffins

2 1/2 cups all-purpose flour
2 cups sugar
1 TB. Pumpkin pie spice
1 tsp. baking soda
1/2 tsp. salt
2 eggs
1 cup canned or cooked pumpkin
1/2 cup vegetable oil
2 cups chopped, peeled apples
1/2 nuts (optional)
In a bowl, combine first five ingredients. In another bowl, combine the eggs, pumpkin, and oil; stir into dry ingredients just until moistened. Fold in apples and nuts. Fill paper-lined or greased muffin cups two-thirds full. Bake at 350 for 35 min. or until golden brown. Cool 5 min. before removing from pans to wire racks. Yeild: 1-1/2 doz.
