Apple 'n Walnut Spiced Muffins
1 cup raisins
2 cups all-purpose flour
1 cup oatmeal
2/3 cup sugar
2 1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. ground cinnamon

1/2 tsp. ground allspice
1/4 tsp. ground nutmeg
4 to 5 small apples
1 egg
2 egg whites
1/4 cup vegetable oil
1/2 cup chopped walnuts

Preheat oven to 350. Grease or line muffin tins. Pour hot water over raisins in a small bowl and let sit
10 minutes; drain well and set aside. Meanwhile, in medium bowl, combine flour, oatmeal, sugar, baking
powder, salt, cinnamon, allspice and nutmeg. Stir and toss to combine; set aside. Peel and core apples.
Grate coarsely--you need about 2 generous cups, lightly pressed down. Combine grated apples, egg, egg
whites, oil, walnuts and raisins; beat to blend. Add to combined dry ingredients and raisins; stir just
until blended and moistened--the batter will be very stiff. Spoon into prepared muffin tins, filling about
3/4 full. Bake 20 to 25 minutes, or until wooden pick inserted in muffin comes out clean. Cool 5 minutes
in pan; remove and serve warm.
