Zucchini Spread

3 cups zucchini shredded
2 cloves garlic, minced
2 Tbs. olive oil
2 Tbs. lemon juice

4 Tbs. fresh cilantro chopped
8 oz. light cream cheese, softened
salt and pepper to taste
|
Combine all ingredients in a food processor and blend well. Chill for at least 1 hour before serving.
Serve with crackers, bread rounds or fresh vegetables.
