Aunt Runner's Chicken Parmesan

4 chicken breasts, skinned and boned
2 Cans Italian style stewed tomatoes
|

2 T. cornstarch
1/2 tsp. oregano or basil
1/4 Cup grated Parmesan cheese
|
|
Place chicken in baking dish. Bake covered 15 minutes in 475 degree (F) oven; drain. Combine tomatoes,
cornstarch, oregano/basil and cook, stirring constatnly until sauce is thickened. Pour heated sauce over
chicken; top with cheeses. Bake 5 minutes uncovered or until chicken is cooked through. Serves 4.

Kentucky Brown Casserole

2 tbsp butter
4 tbsp flour
2 c milk
1/2 tsp chicken bouillon
1/2 c shredded sharp cheddar cheese
4 slices bread, toasted
6 oz cooked turkey breast meat, thinly sliced

6 oz cooked ham, thinly sliced
1 tomato, sliced
4 slices bacon, cooked until crisp
2 tsp Parmesan cheese, grated (use good stuff)
Paprika
|

Preheat oven to 300 degrees. Melt butter in skillet. Stir in flour. Gradually add milk and bouillon; cook
until thickened. Add cheese. Stir until cheese is melted; remove from heat. Put toast in flat baking dish.
Put turkey and ham on toast. Spoon cheese sauce over meat. Bake 10 minutes. Top with bacon and tomato
slices; bake 5 minutes more. Sprinkle with Parmesan and paprika before serving. Serves 4.

German Pancakes

12 medium potatoes
2 tsp. salt
3 onions

3 eggs
1 cup flour (or enough to hold mixture together)
|
|
Grate half the potatoes, half the onions, then the remainder or potatoes and onions. Add salt, the well-beaten
eggs, and flour to thicken the mixture.Cook pancakes and serve with stewed apples (or applesauce) on top.
(season the applesauce with lemon juice, nutmeg, or cinnamon, if desired.)

Citrus Chicken Salad - Oriental

1 cup mayonnaise
1 5-oz can chow mein noodles
4 cups diced, cooked chicken
1 cup diced celery
1/4 cup prepared mustard
1/2 cup diced onion
1 cup Florida orange sections
2 cups Florida grapefruit sections

1 Tbl. orange rind
1 tsp. ginger
1/3 tsp. salt to taste
1/3 tsp. pepper to taste
Sliced seedless grapes
Sliced green olives for garnish

Drain all fruit well. Mix all ingredients except noodles and olives. Chill well. Add noodles and toss
right before serving. Add more mayonnaise if needed. Top with olives and serve. 6 servings.

Chocolate Sheet Cake

Use jelly roll pan
2 cups flour
2 cups sugar
1/2 cup milk
1 tsp. vinegar
2 eggs
1 tsp soda
1 tsp vanilla
|

1 stick butter
3 1/2 T. cocoa
1 cup water
1/2 cup solid shortening (Crisco)
Icing:
1 stick butter
1/2 cup milk
3 1/2 T. cocoa
1 tsp. vanilla
1 box powdered (10x) sugar
Optional: 1 cup walnuts

Preheat oven to 400. degrees F.
1) Sift 2 cups flour and measure . Add 2 cups sugar and sift again.
2) In a small bowl measure 1/2 cup and the vinegar. Beat 2 eggs and add 1 tsp soda and 1 tsp vanilla.
Add to milk.
3) In 3 qt saucepan melt 1 stick butter, 3 1/2 tablespoons cocoa, 1 cup water and 1/2 cup solid Crisco.
Bring to full rolling boil. Remove from heat.
Combine steps 1, 2 and 3. Bake 20 minutes. Ice immediately.
Icing
In 3 qt. saucepan melt 1 stick butter, 1/2 cup milk, and 3 1/2 tablespoons cocoa. Bring to boil, stirring
constantly. Add 1 tsp vanilla and 1 box powdered sugar. Optional: 1 cup walnuts. Refrigerate until firm,
then cut. Keep in in refrigerator.
Makes about 12 servings.
